Lore: although this bossfight is only available in the genocide route, dirty brother is still holding back (as seen in his first attack), as he thinks you are a good person despite your murders. he appears at the end of the genocide route after beating sans, as he realises its his time to shine. the brown soul represents grimyness, and to achieve this dirty brother throws mud at you, making you easier to hit. that is why the brown soul mode makes your hitbox bigger.
